《恐怖的10大食品添加物》江晃榮
根據研究,現代人日常生活每天所吃的食物,至少有七成是非天然的加工食品。

「食品」與「天然食物」的差別,就在於前者經過「加工」,至於如何加工?添加了什麼?食物是否變質?營養是否還在?甚至是多了哪些毒性?這些都是台灣人長期以來忽略的問題,以致於「美食王國」的國民,慢性病和癌症年年高升,健康情形每況愈下。

食品「添加物」之所以成為食安問題的主因,在於添加的目的都是為了商業考量,美化、增香、變化口感、延長賣期,甚至是惡意偽裝混充,這些都是時下食品廠每日忙碌的工作。
為了使來自動物和植物性的食材能保存更久,符合壓低成本大量生產、儘量放到商品賣光前都不腐壞的商業期許,所以廠商必需添加一些物質來防腐、抗氧化。

另外,加工食品業者還要提高產品賣相以「色誘」消費者,如顏色、口感或烹煮方便性等,更會加入特殊的合成化學物質。例如香腸、火腿、臘肉等肉品能在室溫下存放,不須冷藏,並呈現鮮紅色澤,就因為加了「保色劑」及「亞硝酸鹽」等防腐劑;各類豆類製品如豆漿、豆腐、豆乾、豆絲等,為了防止在蒸煮時大量的蛋白質泡沬溢出,常會加「消泡劑」,為了延長室溫下的貯存期限避免酸敗,也會添加「防腐劑」,更可能違法使用「殺菌劑雙氧水」。

洋菇、蓮藕、蓮子、菜乾(如金針、高麗菜、白木耳、笙)、果乾(柿乾、芒果乾、鳳梨乾)等,為了能潔白或保持鮮豔的顏色,也會藉助二氧化硫「漂白劑」來燻蒸……食品添加物幾乎是無所不在的。

這些具有「特效能力」的物質很少是天然物,絕大多數都是化學合成,有些還是來自工業界的強效清潔劑呢。

商業與化學工業聯手摧毀食品安全

「食品添加物」最初的動機,其實原本是很聰明而單純的,古代人類為了保存動物性食物,會用醃、燻、風乾的方法;為了保存植物性食物,會將其晒乾、鹽漬及自然發酵。

另外,為了美化外觀顏色,會用紅花來染蛋、以紅麴來烹調肉類食物:為了增強風味,會運用各式各樣的香辛料,天然新鮮的香辛料包括蔥、薑、蒜、香菜等,乾燥的香辛料則有五香粉、八角、花椒、桂花、紫蘇等;也會用香菇、海帶、黃豆芽熬湯以增強鮮味;以人工捶、搗方式,使食物變得更脆而具彈性。

現代人類的智慧與技術更進一步,開始由天然蔬果中抽取甜味料、色素與香氣,改用人工的方法萃取天然物成分當食品添加物。但是天然物畢竟有限,生產成本又高,因此隨著化學工業的興起,漸漸「智慧連結、產業結盟」,發展出低價、量大的化學合成品,食品添加物的開發更加進展神速。

因為功效好,可以讓加工食品的色、香、味、質感更吸引消費者,也使生產者的加工更方便有效率,成本也更降低,所以食品添加物的使用可說是殺紅了眼,幾乎遍及現代所有的食品了。

「食品添加物」因為大部分不是天然存在於食品中,而是另外製造添加進去的,多少對人體都有毒性,尤其是化學添加物。即使未添加進食品裡,光是加工過程中化學性的處理,也會毀掉原本營養安全的食物,像是天然奶因化學添加物、對乳牛施打荷爾蒙等處理而產生毒性,進口水果因打蠟和防腐而變成毒水果,非常令人惋惜。

為了「方便商人」且「不過度毒害消費者」,世界各國訂出「添加物的最高允許量限制」,這些數據多是經過動物毒性試驗,或參考其他國家的標準來訂定。但由於管理不夠嚴密,食品業者常超量使用,甚至違法使用一些禁用的化學性、工業及添加物,例如:加工原料品質低劣、不新鮮、顏色風味變壞時,就使用漂白劑漂白、再染色,或是加防腐劑、人工調味劑、化學合成香料來掩蓋事實,這些毒物就這樣進入人體了。

「癌」這個漢字是由三個字合成的,即病、品及山,也就是說「加工食品吃得跟山一樣多的話,最後生病就是癌症」!

健腳的方法—有醫師說:老人跌倒比癌症嚴重-跌倒以致傷了腳,而無法行走造成臥床,體能器官急速衰退,此言不是沒有道理的…
【老化是由腳開始】
 黃帝內經:「人之衰老始於足,足血盈則身心健」。
腳是人體的第二個心臟,回流血液需藉著肌肉收縮,經微血管、靜脈回到心臟,若腳的肌肉收縮差,擠壓動作弱,那麼下半身的靜脈循環變慢,血氧提供不足,就會使靜脈血管內的代謝物(酸性物)增加,無法完全運回心臟,那麼就出現下肢腫脹、腳冰冷、痔瘡、靜脈曲張,皮膚角質化變粗硬,趾甲沒光澤,塌陷、腳中風等症狀。
不愛走路就是不健康
不愛走路、不能走路就是不健康,當腳無法走路時,就成為被照顧者。造成國家、社會、家庭的負擔。日本政府有鑑於此,於是全面推行「防止老年人被照顧計畫」,主要目的是降低國家的醫療成本。
現代年輕人整天在電腦桌前,假日對踏青、爬山都沒興趣,街頭買個東西也騎摩托車,有電梯絕不走樓梯,久而久之,腳不再有應有的肌力、敏感度與靈活的微調能力,很年輕就會有從腳底開始,到小腿、大腿、髖骨、腰部、脊椎的痠痛。
要頂天先立地
單腳有26塊骨頭,雙腳有52塊骨頭,佔人體骨頭的1/4,又有56個關節,118根肌腱,走路時雙腳承受身體的2倍重量,跑步時高達6倍體重。
腳如樹根,根要穩樹才不會倒,幹才會挺直。力發於腳,所以練武者最粗初幾年都是練馬步腳力,方法是打赤腳使腳底放平,感受身體的重心,此時會覺得腳底好像黏住地面,如同樹根雜紮地一般,有了往下的力量才會有力量往上,根愈深樹愈穩。
健腳的方法
每天用一點時間來健腳、護腳,那麼腳自然回報給你健康。
1.      晨起踮腳尖10秒鐘,訓練小腿肌肉群。練習510
2.      走路,20分鐘以上。
3.      腳伸直,腳尖往後板10秒鐘,練習510次。
4.      腳趾抓毛巾,練習1020次。
5.      按摩小腿、大腿。
6.      正逆扭轉腳盤。練習1020次。
7.      敲膽經,膽經在腳的正外側。練習510
8.      腳泡溫水,10分鐘。
9.      揉捏腳趾頭。
常見腳的症狀
   腳冰冷
【原因】
血液循環不良、少走路、少運動,糖尿病、動脈栓塞,雷諾氏硬皮症,自主神經、末梢神經容易收縮(女性的自主經易受活化所以手腳較冰冷)
【處理】
l  腳泡溫熱水20分鐘(太熱身體會利用能量來帶走腳部能量會傷心臟)
l  可吃龍眼乾、酒釀等。
l  多走路、多運動。
   腳抽筋
【原因】
環境溫度低。 鈣質攝取不平衡。過度疲勞、腳趾受壓迫或受傷。靜脈曲張。
【處理】
l  腳部保暖。
l  由腳踝處往上輕輕按摩。
l  不硬板抽筋腳趾,應先放鬆再將大拇趾往身體方向板。
l  吃維他命B群。喝運動飲料。
l  睡覺時腳部墊高過心臟。
   腳麻痺
【原因】
l  糖尿病者;腳趾頭與腳盤會有麻痛、灼燒感。
l  椎間盤突出者;從腰、大腿、小腿、腳部都麻
l  化療者;具神經毒性,使身神經病變產生乏麻痺的副作用。
【處理】
針對上述疾病改善。
   腳跟痛
【原因】
l  足底筋脈炎
l  腰髖骨沒對位;走一走髖骨鬆開,不再壓迫腰椎,就不會痛。
【處理】
針對上述疾病改善。
   腳走久會痛
【原因】
l  使用過度。
l  關節退化。
l  腰部神經受壓迫。
l  女性荷爾蒙分泌不足。
【處理】
針對上述疾病改善。
   腳趾、踝、膝關節時常會痛
【原因】
l  走路太多。
l  類風濕性關節炎(指頭關節變形)
l  痛風性關節炎。
l  滑囊炎。
【處理】
l  針對上述疾病改善。
l  膠原蛋白、玻尿酸或葡萄糖胺。
   骨頭卡卡響
【原因】
l  骨頭脫位。
l  長期育用力不當、姿勢不正,使骨骼結構變形。
【處理】
l  多運動使肌肉有力。
l  不要晚睡(滑囊液會減少)
l  膠原蛋白、玻尿酸或葡萄糖胺。
l  吃木耳、山藥、秋葵、海藻、納豆菌、明日葉等多醣蛋白物。
如何買鞋
l  買適合腳型的鞋子。
l  鞋底要1.5公分以上,4公分以下。
l  腳掌較高者:買楦頭較寬者。
l  扁平足;高足弓鞋。
l  試穿時要多走幾步。
l  爬山:鞋底要硬、鞋墊要軟。
l  球類;鞋底能吸收震動力。
l  健走;後腳跟要有避震構造。
l  不穿高跟鞋高跟鞋會增加膝蓋壓力,損傷膝蓋軟骨組織,引起關節炎。
l  不穿人字拖鞋;因沒有包覆性,會使肌腱無支撐力而易疲勞。
